- * Thaumatin family signature *

- Thaumatin [1] is an intensively sweet-tasting protein (100 000 times sweeter
- than sucrose on a molar basis) from Thaumatococcus daniellii, an African
- brush. The protein is made of about 200 residues and contains 8 disulfide
- bonds. A number of proteins have been found to be related to thaumatins. These
- protein are listed below.

- - A maize alpha-amylase/trypsin inhibitor [2].
- - Two tobacco pathogenesis-related proteins: PR-R major and minor forms [3],
- which are induced after infection with viruses.
- - Salt-induced protein NP24 from tomato [4].
- - Salt-induced protein osmotin from tobacco [5].
- - P21, a leaf protein from soybean [6].
- - PWIR2, a leaf protein from wheat [7].

- The exact biological function of all these proteins is not yet known. As a
- signature pattern, we selected a conserved region that includes three cysteine
- residues known (in thaumatin) to be involved in disulfide bonds.
